A fast, flavourful salad sandwich made with zesty Gold Seal mackerel—perfect for busy weekdays and big cravings.

Ingredients

1 can of Gold Seal Lemon and Peppercorn Wild Mackerel
1 celery stalk, finely chopped
¼ red onion, finely chopped
½ bell pepper, diced
1 tbsp mayonnaise
1 tbsp plain Greek yogurt
1 tsp Dijon mustard
1 tbsp fresh dill, chopped (or 1 tsp dried dill)
4 slices of bread, grilled or toasted
Lettuce leaves
1 tomato, sliced

Directions

Drain the mackerel and place it in a bowl, breaking it up slightly with a fork.
Add chopped celery, red onion, and diced bell pepper to the bowl.
Stir in the mayonnaise, greek yogurt, dijon mustard, and chopped dill until well combined.
Toast or grill the bread slices to your liking.
Layer each sandwich with lettuce, tomato slices, and a generous scoop of the mackerel salad.
