Ingredients

  • 2 cups (500 ml) dried orzo
  • ⅓ cup (80 ml) cucumber, diced
  • ¼ cup (60 ml) tomatoes, diced
  • ¼ cup (60 ml) finely diced red onion
  • ½ cup (125 ml) chopped fresh flat leaf parsley
  • ¼ cup (60 ml) chopped fresh mint
  • ¼ cup (60 ml) chopped fresh cilantro (or substitute extra parsley)
  • ¼ cup plus 1 tbsp (15 ml) extra virgin olive oil, divided
  • 1 lemon, juice and zest, plus more for garnish
  • 115 g (1 can) Gold Seal Skinless Boneless Wild Mackerel – Lemon Peppercorn, broken up into large flakes
  • Salt and freshly cracked black pepper, to taste
  • ¼ cup (60 ml) pomegranate seeds, for garnish

Directions

  1. Prepare the orzo according to package instructions and drain well. Toss with 1 tbsp (15 ml) olive oil and cool to room temperature.
  2. In a small mixing bowl, combine cucumber, tomato, red onion, chopped herbs, remaining ¼ cup olive oil, lemon juice and zest. Mix well and add cooled orzo. Let sit for 5 minutes.
  3. Add half the flaked mackerel and toss gently. Season to taste then transfer to a serving dish and top with remaining mackerel, a sprinkle of pomegranate seeds and a few fresh lemon wedges.
  4. Enjoy!
