Who doesn’t like a toasty, warm, grilled sandwich? Nothing gets as good as this Grilled Salmon Panini with Goat Cheese!

Ingredients

  • 1 can (120g) Gold Seal Wild Pink Salmon (Skinless/Boneless), drained
  • ½ cup goat cheese
  • ½ cup ricotta cheese
  • 1 red onion, thinly sliced
  • 1 tsp capers
  • 1 lemon juice
  • 4 slices dark rye

Directions

  1. In a small bowl combine salmon, both cheeses, capers and lemon juice.
  2. Spread mixture onto 2 slices of dark rye.  Top with the thinly sliced red onion and finish with second slice of bread.
  3. Place in a pre-heated panini press for 3 to 5 minutes or until cheese is melted.  Serve warm.

Try this with tuna, sardines, or mackerel.

Feel free to vary the cheese and type of bread, just be sure to use a bread that is not thick or too dense.
