Not your typical Asian salad. This one is made with chewy rice noodle and Thai chili sardines. A unique bowl that’s so good and Full of Good!

Ingredients

1 can (125g) Gold Seal Sardines (Thai Chili) cut in half lengthwise
2 portions thin rice noodles
2 limes zest and juice
2 carrots peeled into ribbons with a veg peeler
1 English cucumber peeled into ribbons with a veg peeler
6 green onions thinly sliced lengthwise
½ cup cilantro finely chopped
½ cup peanuts toasted and roughly chopped (optional)

Directions

Bring a large pot of water to a rolling boil on high heat. Remove the water from the heat and add the package of rice noodles. Let sit for 5 minutes and drain. Rinse well in cold water.
Whisk together the lime juice, cilantro, and the liquid from the can of Gold Seal Sardines in Thai Chili in a large bowl.
Add noodles, carrots, cucumber, and green onion to the bowl and stir until all ingredients are incorporated.
Divide noodles, top with sliced sardines, and garnish with roasted peanuts (optional) or a dusting of a little more fresh cilantro.

TIPS &
TRICKS

Use Gold Seal Sardines (Soya Oil), or Gold Seal Pink Salmon (Skinless/Boneless) for a less spicy salad.
