These sushi bites offer a sweet, tangy, savoury, and spicy fusion of flavours and textures featuring our Gold Seal Sockeye Salmon. Each bite offers a delightful contrast of soft rice and crunchy nori, complemented by the rich umami of the salmon mixture and toppings of your choosing!

Ingredients

For the Rice:

  • 1 cup sushi rice
  • 1 ¼ cups water
  • 1 ½ tsp sugar
  • 1 tbsp natural rice vinegar 
  • 1 tsp kosher salt
  • 1 tbsp furikake 

For the Sushi Topping:

  • 1 can of 213g Gold Seal Sockeye Salmon (I chose No Salt Added), drained
  • 1/4 cup mayonnaise
  • 1 tbsp sriracha
  • ½ tbsp soy sauce

 To Assemble:   

  • 3 nori sheets, cut into 12 squares (2 1/2″ each)
  • Optional toppings: sriracha, BBQ sauce, avocado, green onion, serrano pepper, cucumber

Directions

For the Rice:

  • Rinse sushi rice until water runs clear.
  • Bring to a boil with water, then simmer covered for 18 min.
  • Turn off heat, rest 10 min.
  • Dissolve sugar and salt in vinegar, fold into rice.

For the Topping:

  • Mix together salmon, mayonnaise, sriracha, and soy sauce.   

Assembly:

  • Preheat oven to 375°F. Prep a muffin tin with spray.
  • Place nori pieces in each cup, add rice, press down.
  • Add furikake then salmon topping.
  • Bake 15-20 min until golden. Let cool slightly.

Serve with chosen toppings!
