Cleanse Salad

Ingredients

For the dressing: 

  • ½ cup olive oil 
  • 3 tbsp lemon juice 
  • 1 tbsp Dijon mustard 
  • 1 garlic clove, grated 
  • 1 tsp ground pepper 
  • Salt, to taste 

 

For the salad:  

  • 4 cups kale, shredded 
  • 4 cups purple cabbage, shredded 
  • 1 English cucumber, thinly sliced in half moons 
  • 2 cups carrots, shredded 
  • 2 cups green peas 
  • 1 head fennel, thinly sliced  
  • 4 cans (115g) Gold Seal Mediterranean Mackerel, drained and flaked with a fork 
  • 2 avocados, diced 
  • ½ cup parmesan, grated 

Directions

  1. To make the dressing, whisk all ingredients together in a small bowl.  
  2. Prep all the salad ingredients and add them to a large bowl. 
  3. Toss the salad with dressing, serve and enjoy!
