Ingredients
For the dressing:
- ½ cup olive oil
- 3 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 garlic clove, grated
- 1 tsp ground pepper
- Salt, to taste
For the salad:
- 4 cups kale, shredded
- 4 cups purple cabbage, shredded
- 1 English cucumber, thinly sliced in half moons
- 2 cups carrots, shredded
- 2 cups green peas
- 1 head fennel, thinly sliced
- 4 cans (115g) Gold Seal Mediterranean Mackerel, drained and flaked with a fork
- 2 avocados, diced
- ½ cup parmesan, grated
Directions
- To make the dressing, whisk all ingredients together in a small bowl.
- Prep all the salad ingredients and add them to a large bowl.
- Toss the salad with dressing, serve and enjoy!
