Ingredients

  • 1 can of Gold Seal Wild Mackerel in Olive Oil, drained
  • 1 ripe mango, peeled and diced
  • ¼ red onion, finely diced
  • 1 small jalapeño, seeded and finely chopped
  • A handful of fresh cilantro, chopped
  • Juice of 1 lime
  • 4 corn tortillas

Directions

  1. In a medium bowl, combine the diced mango, red onion, jalapeño, and chopped cilantro.
  2. Squeeze in the lime juice and mix well to create your salsa.
  3. Gently stir in the drained mackerel, breaking it into bite-sized pieces as you mix.
  4. Warm the corn tortillas in a preheated dry skillet for about 30 seconds per side, or until soft and pliable.
  5. Fill each tortilla with a generous spoonful of the mackerel and mango salsa mixture.
  6. Serve and enjoy!
