An easy spicy Sardine Mazemen (soupless-style ramen) that anyone can make. Garnish with your favourite ramen toppings for a classic look and taste! So good!

Ingredients

  • 1 can (125g) Gold Seal Sardines (Thai Chili)
  • 2 packages ramen noodles
  • Toasted nori, crumbled or cut into stripes
  • Slice cucumbers, to finish
  • Sliced green onions, to finish

DRESSING:

  • 1 cloves garlic, crushed
  • 1 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp hoisin sauce
  • 1 tbsp oyster sauce

Directions

  1. Bring a large pot of water to a rolling boil. Using a slotted spoon, gently add the eggs to the pot.
  2. Maintain a simmer for 7 minutes, adjusting the heat if needed. When done, remove the eggs from the hot water with the slotted spoon and immediately plunge into an ice bath to cool down.
  3. Peel and cut in half.
  4. While the eggs are boiling, make the fish Sauce vinaigrette. In a small bowl, mix together the garlic, soy, sesame oil, rice vinegar, hoisin, and oyster sauce. Taste and season with salt and pepper. Set aside.
  5. Cook the noodles according to the package and drain. Mix the noodles with the sauce and top with sardines, egg, seaweed, cucumbers, and sliced green onions. Enjoy immediately.
