Ingredients

  • 1 avocado, skin and pit discarded
  • 1 tbsp cilantro, chopped
  • 1 green onion, finely chopped
  • ½ lime, juice only
  • Salt and pepper, to taste
  • ⅓ cup sour cream
  • 1 tbsp chipotle sauce
  • 1 can (115 g) Gold Seal Lemon & Peppercorn Wild Mackerel, drained
  • 1 Roma tomato, sliced
  • ⅔ cup shredded iceberg lettuce
  • 2 fresh crusty buns, like a Portuguese bun or banh mi roll

Directions

  1. In a small mixing bowl combine avocado, cilantro, green onion and lime juice.
  2. Smash with the back of a fork until creamy, but still chunky.
  3. Season to taste with salt and pepper.
  4. In a separate bowl, stir together sour cream, chipotle sauce and a pinch of salt until smooth and well combined.
  5. Split the buns lengthwise and smear both sides generously with the avocado mixture.
  6. To the bottom half, layer lemon pepper mackerel, sliced tomato, shredded lettuce and a drizzle of chipotle sauce.
  7. Close buns and enjoy immediately.
