Crunchy Salmon Salad

Ingredients

  • 2 cups red cabbage, thinly sliced 
  • 1 yellow bell pepper, thinly sliced 
  • 1 red bell pepper, thinly sliced 
  • ¼ cup red onion, thinly sliced 
  • 2 medium carrots, cut into matchsticks 
  • 3 mandarins, segmented with as much of the pith removed as possible 
  • 1 can (120g) Gold Seal Skinless Boneless Salmon, drained 
  • ¼ cup cilantro 
  • 2 scallions, thinly sliced 
  • 2 tbsp toasted sesame seeds 
  • ½ cup roasted peanuts, roughly chopped 

For the dressing 

  • 1 tbsp sesame oil 
  • 2 tbsp rice wine vinegar 
  • 2 tbsp soy sauce 
  • 1 clove garlic, minced 
  • 1 tbsp ginger, minced 
  • 1 tbsp honey

Directions

  1. In a small bowl, whisk together the salad dressing ingredients.  
  2. Add all salad ingredients (minus the peanuts) to a large bowl and toss with the dressing until well combined. Garnish with peanuts and serve.
