Greek Sardine Salad

Ingredients

  • 2 cans (125g) Gold Seal Sardines in Soya Oil, drained
  • 3 cups arugula
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1/2 cup red onion, sliced
  • ½ cup olives
  • 1/2 cup feta, crumbled
  • 2 tbsp olive oil
  • 2 tbsp dried oregano
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Directions

  1. Mix arugula, tomatoes, cucumber, red pepper, red onion and olives in a large bowl. 
  2. Toss with olive oil, oregano, lemon juice and season with salt and pepper.
  3. Divide the salad amongst bowls, top with sardines and crumble feta on top.
