Ingredients

  • 25 cloves garlic, peeled and left whole, plus 2 more minced cloves, kept separate
  • 1 cup (250 ml) extra virgin olive oil, plus more as needed
  • 2 cans (115 g) Gold Seal Mackerel in Olive Oil
  • 1 tsp (5 ml) chili flakes
  • 14 oz (400 g) spaghetti
  • salt and freshly cracked black pepper, to taste
  • ¼ cup (60 ml) chopped flat leaf parsley
  • grated Parmigiano Reggiano, to serve (optional)
  • lemon wedges, to serve (optional)

Directions

  1. In a small sauce pot over medium heat combine garlic and olive oil, adding a bit more olive oil, as needed, so the cloves are submerged. Heat until the oil begins to bubble gently, then reduce heat to low and continue to cook until garlic is golden brown and softened all the way through, 15 to 20 minutes. Remove from heat and strain, reserving the garlic and infused oil separately.
  2. Transfer cooked garlic to a small bowl along with mackerel and mash together with the back of a fork, leaving mixture slightly chunky.
  3. Cook spaghetti according to package instructions or to your preferred doneness. Strain and reserve about 1 cup (250 ml) cooking liquid.
  4. In a large pan over medium-high heat, add ½ cup (125 ml) of the infused olive oil, minced garlic and chili flakes. Cook for about 1 minute, until garlic is sizzling and fragrant, but not browned. Add garlic-mackerel mixture and cook for another minute, making sure nothing sticks to the bottom of the pan.
  5. Pour in about ½ cup (125 ml) reserved pasta liquid and bring to a simmer, stirring constantly until the mixture thickens to a sauce-like consistency. If it seems too thick or too thin, add a splash more pasta water to loosen or cook a couple minutes longer to thicken.
  6. Add spaghetti to the pan and toss until pasta is well coated. Season to taste, then add parsley and toss again.
  7. Transfer to serving dishes and serve with grated Parmigiano Reggiano and lemon wedges on the side.
