An updated version of a classic: the Modern Cobb Salad is full of fresh ingredients and savoury salmon. This not-so-traditional cobb salad makes a great starter to impress!

Ingredients

  • 4 slices crispy thick-cut bacon
  • 2 large eggs
  • 1 can (213g) Gold Seal Wild Pink Salmon (Traditional)
  • ½ head romaine lettuce
  • ½ head butter lettuce
  • 1 seeded avocado
  • 1 sliced tomato
  • 2 tbsp chives or green onions
  • 2 tbsp Roquefort cheese

Directions

  1. Make the vinaigrette, whisk the vinegar, Dijon, sugar, and salt and pepper. Whisk the olive oil in a slow, steady stream.
  2. Cook the bacon in a skillet over medium heat until desired crispiness, flipping as needed. Drain on paper towels and roughly chop.
  3. While the bacon is cooking, bring a pot of water to boil and hard boil the eggs, about 10-12 minutes. Rinse in cool water, peel, and roughly chop.
  4. Toss the lettuces together, then equally divide amongst two large plates. Arrange the drained salmon, avocado, and tomato (if using) on top.  Garnish with the chopped eggs, bacon, chives, and crumbled cheese. Dress to taste and enjoy.
