These salmon chickpea burgers make the most adorable sliders and are so easy to make! Top with carrots and cucumber for a fresh crunch.

Ingredients

  • 1 can (213g) Gold Seal Wild Pink Salmon (Traditional), drained
  • 1 tbsp vegetable oil
  • 1 small onion, finely chopped
  • ½ cup panko bread crumbs
  • 1 egg
  • ½ cup chickpeas, cooked
  • ½ lemon juice
  • ¼ cup roasted red pepper, diced
  • Salt and pepper to taste
  • 4 regular or 8 small hamburger or slider buns
  • ½ cup carrot, shredded
  • ½ cup cucumber seeded and julliened

Directions

  1. In a bowl mix together salmon, onion, bread crumbs, chickpeas, egg, lemon juice, and red pepper and stir until well blended. Place in refrigerator for 15 minutes.
  2. Remove from refrigerator and form into 4 large patties or 8 smaller patties.
  3. Heat vegetable oil in frying pan (non-stick is best) over medium heat. Fry patties for 2-3 minutes on each side or until golden brown.
  4. Place on toasted buns and top with carrots and cucumber.

    Quite easy to make, as well as quite tasty. With the ingredients, the patties were easy to break with careless handling. I added some ground coriander, but skipped lemon juice. It wasn’t clear what the ‘1/2 lemon juice’ actually was. Teaspoon, tablespoon or cup? I just dribbled a little on the greens that we used to accompany the patties.
