Salmon Mac and Cheese

A fresh spin on an age-old recipe. You can’t go wrong with this comforting salmon mac and cheese!


  • 1/2 pound fusilli pasta, cooked, cooled and set aside
  • cups shredded old cheddar
  • 1/2 cup finely chopped green onions
  • 1/2 cups sliced kalamata olives
  • 1 1/2 can evaporated milk
  • 1/2 cup cream cheese
  • 1/2 cup bread crumbs



  1. Preheat oven at 350°F.
  2. In a mixing bowl combine pasta, salmon, cheddar cheese, green onions and olives, mix well and pour in a greased baking pan or oven-safe fry pan.
  3. In a small saucepan heat the evaporated milk and add cream cheese stirring until cheese is melted.
  4. Pour milk and cheese mixture over pasta and coat with bread crumbs. Bake uncovered in preheated oven at 350°F for 30 – 35 minutes.

This recipe works really well with tuna as well.
