This Spicy Mackerel Poke Bowl offers bold, spicy flavours with the tangy kick of sriracha complementing the richness of mackerel and creamy Kewpie mayonnaise. Filled with fresh vegetables, it’s a balanced and satisfying meal bursting with textures and colours.

Ingredients

2 tins Gold Seal Mackerel in Olive Oil
1/8 cup Kewpie Mayonnaise
1 tsp Sriracha
1/2 tsp Sesame Seeds
1/2 cup Edamame,cooked and shelled
1/4 cup Cucumber, shaved
1 Avocado, sliced
2-3 small Radish, thinly sliced
1/2 cup sliced Purple Cabbage
Microgreens, for garnish
Green Onion, for garnish
Pickled Ginger, for garnish
Seaweed for garnish
Sesame seeds for garnish
Ponzu dressing for drizzling

Sushi Rice Ingredients

1 cup Sushi Rice
1 tbsp Rice Vinegar
1 tbsp Sugar
1/2 tsp Salt

Directions

Cook sushi rice according to package direction. In a small cup, combine vinegar, sugar,and salt. Once sushi rice is fully cooked, pourvinegar mixture over rice and mix well. Setaside and let cool.
In a bowl, drain the mackerel and combine with mayo and sriracha. Set aside.
To assemble the poke bowls, add sushi rice to a bowl. Add spicy mackerel salad to bowlthen top with remainingingredients (cucumber, edamame, avocado, radish, cabbage).
Garnish with pickled ginger, microgreens, seaweed, green onions, and sesame seeds.
