This Spicy Mackerel Poke Bowl offers bold, spicy flavours with the tangy kick of sriracha complementing the richness of mackerel and creamy Kewpie mayonnaise. Filled with fresh vegetables, it’s a balanced and satisfying meal bursting with textures and colours.

Ingredients

  • 2 tins Gold Seal Mackerel in Olive Oil
  • 1/8 cup Kewpie Mayonnaise
  • 1 tsp Sriracha
  • 1/2 tsp Sesame Seeds
  • 1/2 cup Edamame,cooked and shelled
  • 1/4 cup Cucumber, shaved
  • 1 Avocado, sliced
  • 2-3 small Radish, thinly sliced
  • 1/2 cup sliced Purple Cabbage
  • Microgreens, for garnish
  • Green Onion, for garnish
  • Pickled Ginger, for garnish
  • Seaweed for garnish
  • Sesame seeds for garnish
  • Ponzu dressing for drizzling

Sushi Rice Ingredients

  • 1 cup Sushi Rice
  • 1 tbsp Rice Vinegar
  • 1 tbsp Sugar
  • 1/2 tsp Salt

Directions

  1. Cook sushi rice according to package direction. In a small cup, combine vinegar, sugar,and salt. Once sushi rice is fully cooked, pourvinegar mixture over rice and mix well. Setaside and let cool.
  2. In a bowl, drain the mackerel and combine with mayo and sriracha. Set aside.
  3. To assemble the poke bowls, add sushi rice to a bowl. Add spicy mackerel salad to bowlthen top with remainingingredients (cucumber, edamame, avocado, radish, cabbage).
  4. Garnish with pickled ginger, microgreens, seaweed, green onions, and sesame seeds.
