Salmon, Watermelon, and Feta Salad
Sweet watermelon and savoury salmon will leave you wanting more. This Salmon, Watermelon, and Feta Salad is so good, it’s a family favourite!
1 can (170g) Gold Seal Wild Sockeye Salmon (Skinless/Boneless), drained
1 tbsp white wine vinegar
3 tbsp vegetable oil
1 tsp regular mustard
Salt and pepper, to taste
¼ small watermelon, peeled, seeded & cubed
½ cup feta cheese, crumbled
- Mix the vinegar, oil, mustard, and salt and pepper together, then set aside.
- Split the watermelon and feta cheese onto 4 chilled salad plates.
- Add chunks of salmon and drizzle the mustard vinaigrette on top.
Tips and Tricks
Garnish with thinly sliced red onion and mint.
