Salmon Couscous Salad

A refreshing, easy-to-prepare salad that’s filling and packed with Feel Good Fuel! Try our Salmon Couscous Salad for your next lunch.

Ingredients

  • tsp chopped fresh mint
  • tsp chopped fresh basil
  • cup chopped fresh parsley
  • Juice & zest of 1 lemon
  • ½ cup finely diced celery
  • ½ cup finely diced red peppers
  • ½ cup finely diced cucumber
  • ¼ cup chopped green onions
  • cup cooked couscous (follow directions on package)
  • ½ cup olive oil
  • Freshly cracked pepper, to taste
  • radicchio leaves (optional)

Directions

  1. Combine all ingredients (except radicchio) in a large mixing bowl and mix well.
  2. Serve directly on chilled plates, or scooped into radicchio leaves.

Tips and Tricks

Add halved cherry tomatoes for extra colour or serve with a side of grilled summer veggies.

It can be made a day ahead and refrigerated.
