A refreshing, easy-to-prepare salad that’s filling and packed with Feel Good Fuel! Try our Salmon Couscous Salad for your next lunch.

Ingredients

2 cans (170g) Gold Seal Wild Sockeye Salmon (Skinless/Boneless), drained
3 tsp chopped fresh mint
2 tsp chopped fresh basil
⅓ cup chopped fresh parsley
Juice & zest of 1 lemon
½ cup finely diced celery
½ cup finely diced red peppers
½ cup finely diced cucumber
¼ cup chopped green onions
2 cup cooked couscous (follow directions on package)
½ cup olive oil
Freshly cracked pepper, to taste
6 radicchio leaves (optional)

Skinless / Boneless

Directions

Combine all ingredients (except radicchio) in a large mixing bowl and mix well.
Serve directly on chilled plates, or scooped into radicchio leaves.

TIPS &
TRICKS

Add halved cherry tomatoes for extra colour or serve with a side of grilled summer veggies.

It can be made a day ahead and refrigerated.
