Sardine Soba Noodle Salad

Ingredients

  • 300g soba noodles  
  • 3 tbsp olive oil 
  • 2 tbsp lime juice 
  • 1 tbsp soy sauce 
  • 1 tbsp honey 
  • 2 cups carrot, spiralized  
  • 2 cups zucchini, spiralized 
  • 1 cup edamame 
  • 1 large avocado, diced  
  • 2 cans (125g) Gold Seal Sardines in Soya Oil, drained and flaked    
  • ¼ cup mint leaves, torn  
  • ¼ cup basil, torn 
  • Salt and pepper to taste 

Directions

  1. Cook the soba noodles according to the package instructions. Strain and rinse under cold water.  
  2. In a small bowl, whisk together the olive oil, lime juice, soy sauce and honey. Season with salt and pepper.  
  3. Add the soba noodles, carrot and zucchini to a large bowl with the edamame, avocado and sardines. Toss with the dressing.  
  4. Garnish with mint and basil and serve.
