Ingredients
- 300g soba noodles
- 3 tbsp olive oil
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tbsp honey
- 2 cups carrot, spiralized
- 2 cups zucchini, spiralized
- 1 cup edamame
- 1 large avocado, diced
- 2 cans (125g) Gold Seal Sardines in Soya Oil, drained and flaked
- ¼ cup mint leaves, torn
- ¼ cup basil, torn
- Salt and pepper to taste
Directions
- Cook the soba noodles according to the package instructions. Strain and rinse under cold water.
- In a small bowl, whisk together the olive oil, lime juice, soy sauce and honey. Season with salt and pepper.
- Add the soba noodles, carrot and zucchini to a large bowl with the edamame, avocado and sardines. Toss with the dressing.
- Garnish with mint and basil and serve.
